BREWVIEW ON UNIBROUE’S ÉPHÉMÈRE CERISE

Unibroue’s Éphémère Cerise was another one of the ales that I never had the pleasure of enjoying before. The 3 Éphémères from Unibroue that will be first time experiences for me are: Framboise, Blackcurrant, and Cerise.

Reminiscent of rosé wine with a dry aftertaste of wild pin cherries.

Unibroue’s Éphémère Cerise (Cherry) is an exclusive fruity ale. It’s sweet nose of cherries and its fruity spicy taste will offer you a surprising sensory experience. Please don’t miss out on this pleasure as it will only be ephemeral.

As its name suggests, Éphémère is an ephemeral ale that comes and goes with the seasons. It was developed as a series to feature a seasonal fruit in a refreshing, lightly spiced white ale. The label depicts a fairy, an ephemeral spirit associated with fruits picked at the peak of ripeness during each harvest season. She first appeared in the spring of 2000 and has since been celebrated on a variety of seasonal fruit ales such as apple (brewed all year long), cranberry, blackcurrant, peach, raspberry and blueberry.

OUR BREWVIEW ON UNIBROUE’S ÉPHÉMÈRE CERISE

APPEARANCE / THE POUR:
We served it at 40° F in the signature Unibroue Éphémère drinking glass. The pour gave an easy 3-finger height,  which was  a creamy, dense, off white colored head. Even sheeted lacework is left behind as the head collapses. Color is aged, polished copper with faint rose highlights. We did ensure the glass was “beer clean”. The Brussels lacework the head left behind once it collapsed- was thick and patchy on the sides of the glass. The rim color variation is a light golden color. During consumption, (as with previous Unibroue BrewViews) the head held an 1/8″ height until the bottom of the glass. This is consistent of the Unibroue products.  By now, you know that Unibroue advocates in its pouring ritual to introduce the yeast into the glass.
AROMA / BOUQUET:
Morello / Montmorency cherries, cherry stone, cherry skin. Some gentle herbaceousness, Mr. Pibb / cherry cola, very, very faint Robitussin Cherry cough medicine. Belgian yeast and slight woodiness.
TASTE:
The aromas definitely carry over into the taste. No mistake here. Cherry skin, earthy cherry stone. It would have been interesting to taste this beer when it was fresh. But it was fantastic aged.

MOUTHFEEL / PALATE:
Light bodied, tickles the tip of the tongue with its gentle effervescence. Easy drinking, the herbaceous factor begs you for that next sip. Cherry stone finish that is moderately dry.


FOOD PAIRING SUGGESTIONS

CHEESES:
Goat cheese infused with cherries, Triple cream brie, washed rind Trappist cheeses.

APPETIZERS:
Goat cheese stuffed cherries, Beet Hummus with Tart Cherry topping, Tart cherry brie bites, Butternut Squash Goat Cheese Dip with Tart Cherry Compote, Cauliflower Tart Cherry Salad. Skilled chefs could make a balsamic vinaigrette with it.

ENTRÉES:
Lamb Shanks braised with Port and Éphémère Cerise, Flemish hare with cherries, Boulets liégeois, Tart Cherry Ahi Tuna Kabobs, Tart Cherry Chestnut Stuffed Turkey Roulade, Tart Cherry Glazed Spicy Meatballs,  Garden Veggie Pizza with Tart Cherry Balsamic Reduction, and many more.

DESSERTS:
There are so many to choose from, but I’ll list a short handful: Éphémère Cerise Crème Brûlée, Cheesecakes with Cherry and Chocolate, Tart Cherry Chocolate Galette, Cherry pie (of course), Fresh Cherry Crisp, Chocolate covered cherries, and so many more! Or, simply find the freshest Morello or Montmorency cherries that you can, and enjoy them as they are.


OVERALL IMPRESSION

This is a SEXY beer. One that you can use with your Valentine’s Day surprise for your loved one, or for any time of the year that mood takes you! It’s almost an aphrodisiac! Another great liquid to pair with a wide variety of dishes- from cheeses, to tart appetizers, to well infused cherry entrées, to succulent desserts. Chocolate fans rejoice- this is a perfect beer to go along with all the classics!

Great Summer refresher, but it’s flavor profile leaves it wide open to a numerous amount of world cuisines and dishes for year round enjoyment. (We dare you to come up with new chicken dishes to incorporate Éphémère Cerise in!) The low ABV % makes it a great sessionable liquid for those that want that refreshing edge to their beer.

One of our favorite Éphémères. Another world class (and fun) beer from Unibroue to savor. If you find it at your local retailer… GET IT! However, according to Jerry Vietz, any bottles you find on the shelves or in pubs will be exceedingly rare. He has informed me that it will be released again in Canada in the near future.
