APPEARANCE / THE POUR:
Pours a dark brown color with a medium tan colored, dense head. Good Belgian lace in the glass. Excellent meniscus for this style of beer.
AROMA / BOUQUET:
Of course heavy in the raisins, and a strong treacle toffee aroma. The herbal character of the rosemary balances perfectly. There is an alcohol “sting” as well in the bouquet.
Bitter raisin, with a great deep earthiness to it. You can taste the rosemary in the background.
MOUTHFEEL / PALATE:
Body is medium to full, the texture is sticky, nice hop / rosemary bitterness at the top of the mouth. The finish is very long, malty, yet herbal.
FOOD PAIRING SUGGESTIONS:
Appetizers- Strong blue veined cheeses, Charcuterie. Entrées- Carbonade flamande, aggressively spiced Ribeye filets. Desserts- Savory Pannenkoeken (Belgian pancakes), Liege waffles. Try this: Chocolate pudding laced with Biscoff cookie spread.
This is one of our favorite beers. World class- seek this one out.
