Aged? Many beers have a long maturation, but this one has only 24-36 months in oak barrels. Pale? This beer has an old gold to bronze color, rather than the burgundy more common in the breweries of West Flanders. This is the ‘mother beer,’ used in various quantities to blend with the other Petrus beers, and to give them their unique and very distinctive taste. This mother beer is rather sour with a bite like the best Brut Champagnes. A connoisseur’s delight! The only one of its kind on the U.S. market.

APPEARANCE / THE POUR:
ABV: 7.3%. Poured into a tulip shaped glass at 55°F. Pours with a nice 2-finger head, the color is light golden. The meniscus is somewhat fast rising- the head collapses quickly due to the acidity of the beer.
AROMA / BOUQUET:
Wonderful sour, lactic fruity bouquet. Great funk and wood. No hop aroma.
Crisp, dry, acidic, tart, vinous. I had my wife try this for the first time, she said it reminded her of SweeTARTS® candy. How’s that for a flavor descriptive? You’ve got to love a woman’s perspective on beer tasting!
MOUTHFEEL / PALATE:
Dry, puckering sourness. Quenching, tart. This beer has a unique mouthfeel to it due to the wood aging.
FOOD PAIRING SUGGESTIONS:
APPETIZERS: Salads with light vinagrettes. ENTRÈES: Mussels and Pomme Frites. Pastas with pesto, roasted chicken. Asian cuisine… SUSHI!
