It has been a while since we’ve actually had ROCHEFORT TRAPPIST 8, so we thought we would enjoy it again, and offer our BrewView. This is another one of those beers we’ve thoroughly enjoyed numerous times since the beers became widely available in the United States.
APPEARANCE / THE POUR:
9.2% ABV. Poured into a open-mouthed Trappist goblet. Poured at 55° F. Pours deep cloudy brown color, rocky 2-3 finger dense light tan head with tight small bubbles. The meniscus is very slow rising- good sign.
AROMA / BOUQUET:
The classic “house” yeast smell that is characteristic of Rochefort beers. Strong chocolate and raisin bouquet, with plums in the background.
Very complex tasting beer. The richness of this beer is not quite as intense as it’s brother the “10”. However, it still has the rich malty sweetness, beautiful phenols. Dark bitter chocolate, dark cocoa, raisiny. The hops are more of a background thing on this beer.
MOUTHFEEL / PALATE:
This is a medium bodied beer, slightly less (ever so slightly less) bodied than the 10. At 9.2% ABV, you can taste the alcohol and feel it too! The aftertaste is of treacle toffee and cocoa.
FOOD PAIRING SUGGESTIONS:
APPETIZERS: Blue veined cheeses, sausages.
ENTRÈES: Anything with rich, assertive spicy flavors; the sky is the limit with this one.
DESSERTS: Anything chocolate!! Our favorite thing to do is take rich chocolate pudding, mix in some Biscoff cookie spread, and garnish it with small chunks of dark Belgian chocolate and whipped cream…
One of the world’s classic Trappist beers. Seek this one out for sure. This is one of the “WOW” beers… GOD bless the Trappists!
