Brewery De Brabandere looks back on a rich history, and looks to the future with equal confidence. The dream cherished by founder Adolphe De Brabandere at the end of the nineteenth century when he laid the foundations for his brewery in Bavikhove has come to fruition in the successful company of today.
Their rich assortment of beers is enjoyed by connoisseurs far beyond their borders. Brewing was, is, and will continue to be, an art at De Brabandere.
Their numerous characterful beers can be considered as their heritage: made with traditional craftsmanship, authentic ingredients and… lots of love. To create unique flavour sensations for you to share with your friends is what motivates those at De Brabandere, day in and day out.

THE BREWERY’S NEW NAME
With a new generation, the Bavik Brewery chooses for a new name: Brouwerij De Brabandere. This with a respectful wink at 120 + years of history. Hand in hand with a tasteful future.
“In 2014 the brewery celebrated its 120th birthday.” says Ignace De Brabandere. “This was the ideal opportunity to review our strategy, look up our authenticity and redefine our values.”
“With an external survey and an investigation within the brewery in collaboration with many people who’ve been behind our brewery since a long time, we’ve been able to distillate our values and turn them into a positive story. This story is transformed into our new visual identity of the brewery.” says his son Albert De Brabandere.

Style category: Belgian Wild Witbier
A beer to blow your mind and refresh your soul.
Harvest… The wild idea to use the microflora derived from the Petrus Oak foeders into another beer has never seen before. Through a new technique at Brewery De Brabandere they are able to harvest those wild yeasts and bacteria that live on the inside of the oak foeders .
Unleash… By unleashing the microflora into Wittekerke, their sessional wit beer, a unique refreshment is created. A wild idea in first fermentation.
The refinement and refreshment of Wittekerke Wit united with the harvested and unleashed wild yeast and bacteria, results in a unique balance of wit beer and sour aromas. This ultra-flavoured and refreshing session beer is easily accessible for everyone … and demands for more than one!

OUR BREWVIEW ON BROUWERIJ DE BRABANDERE – WITTEKERKE WILD
APPEARANCE / THE POUR:
5% ABV, we served at 40° F (verified by a Vacu Vin snap thermometer) in a tulip-shaped glass.
It easily poured a 3-finger height, white colored head that is dense, rocky, with large and small bubbles (we did ensure the glass was “beer clean.”)
The beer color is in between a Straw and Pale Gold, SRM value between 3-4. The meniscus is medium rising, rim color variation stays the same. The Brussels lacework the head left behind once it collapsed (within 7-8 minutes) was even-sheeted but very dense on the sides of the glass. The head kept at a 1/4″ height during the entire consumption time… very nice.
AROMA / BOUQUET:
Nose is of Foeder wood, horse blanket, wet hay, grapefruit, Meyer lemon, and a very faint hint of sweeTARTS original candy. Neither one aroma overpowers another; they are very well balanced and harmonious. The aromas are somewhat akin to an Oude Geuze.
The aromas definitely carry over into the taste. Great balance of spiciness and lacto sourness.
MOUTHFEEL / PALATE:
Light to medium bodied, immediately tickles the entire mouth with its effervescence and tartness. Yet it still is easy on the palate for a witbier that has been kicked up with lacto sourness. It is those exact characteristics that make you want that next refreshing sip…
FOOD PAIRING SUGGESTIONS
(Cheeses) Rich, Blue veined, or Washed Rind cheeses would go very well- many to choose from. Because of its palate scrubbing acidity, you could enjoy it with a Charcuterie platter with rich cuts of meats.
Wide open- poultry, seafood, game, beef. Way too many to mention here. What we can say, that even though this is a light colored beer, its flavor profile opens it up to many cuisines. It is one of the most versatile beers out there. A true degustation beer.
The trend for desserts lately is now for offerings that are more on the savory side. We would suggest pairing Wittekerke Wild with Lemon Thyme Shortbread, poached pear with herbs, Bergamot, orange and thyme semolina olive oil cake, and of course, classic cheesecake.
Fans of the PETRUS line of sour ales and witbiers will love Wittekerke Wild! This is a very complex beer, and can be enjoyed all year round. Fantastic drinkability, a true session beer. This would be a great beer to introduce your friends to sour / wild ales. Seek this one out for sure.
